Day 324: Roasted sweet potato with a little Greek yogurt, bacon, sautéed carrots, garlic and kale. Garnished with pumpkin seeds and blueberries.

IF I ever had a diner or a little breakfast spot - I would put this on the menu. I might veganize it and with some cashew yogurt and swap the bacon for some marinated mushrooms. Either way, it was just so good.
